Late in the season when the plant produces small fruits, Andrea and Riccardo collect them to process and preserve them in oil and to produce their delicate paté. Try it with mortadella, bresaola or ham. An interesting match for almonds and nuts, which add crunchiness to the soft mellowness of the cream. Also not to be forgotten is the combination with several kinds of cheese: aged ones such as pecorino, but also spicy gorgonzola or the classic Ragusan caciocavallo. Also recommended as a seasoning for first courses or boiled and roasted meats.
